Keep those winter bugs at bay with this vibrant soup created using a range of good-for-you green vegetables. This soup can be whipped up in no time at all, and not only will it warm you from your head to your toes, it will provide your body with a range of important vitamins and minerals. 

One of my favourite things about this recipe is that it is super versatile too. Feel free to substitute in whatever green vegetable you have in the fridge. I have made this countless times and each time it is slightly different but it is always delicious. The miso paste is a great addition to this soup. You can use white or brown, it does not matter!

For those of you who are unfamiliar with miso paste, it can be purchased now at many supermarkets or if you have one in your area, your local Asian grocer. It is made by fermenting soybeans which creates a deep of flavour known as unami. It is rich in a range of essential minerals and a great source of various B vitamins as well as vitamin E, K and folic acid. Due to it being fermented, it contains beneficial bacteria which is great for the gut which will help you stay healthy during the flu season.
